Why the crowd misleads you

A queue can be small bills. A quieter room can be larger tables. Desserts that never got added to the bill make a busy night look better than it was. If the paper orders go into the bin at close, tomorrow's buying is a habit, not a count.

Best sellers also move. A special that carried Saturday may not exist on Monday. If you only remember the dish people talked about, you will overbuy it and run out of the plate that actually sold.

What to look at after service

You do not need a dozen charts for this. You need the day, the week, the month, and a way to pick your own dates when a festival week should not be compared with an ordinary week.

• Cash and UPI as separate totals
• The items that sold the most
• Lunch and dinner as different stretches of the same day, if both services matter
